Does anyone of you know of groups that are focused on collecting art of fantasy birds (species and characters), including mythological ones or hybrids? 

The only ones that I know of, are
:iconeverything-winged: (also collects non-avian winged animals)
:iconornomythology: (looks deserted).

Of course there are plenty animal or bird groups that accept fantasy species as well. I'm very interested if you know some groups that accepts fantasy birds, but I especially am looking for groups that only accept fantasy bird art.

If it is non-existent, I might consider starting a themed group...

I am a biologist, graduated in the field of behavioural ecology. My passion is with birds, and I want to learn more about their anatomy, behaviour and taxonomy. But another passion of mine is fantasy, and my best friend BlackMysticA (aka Mystic) created a world with siderians and other fantasy animals that invaded my mind. So, it might be obvious that I draw a lot of birds and fantasy creatures (especially siderians!), but I also draw (or drew) portraits with pencil.
Anatomy is important to me. It makes the drawing more realistic and - more importantly - makes fantasy creatures come to life! About anatomy, I learn(ed) that doing dissections and skeleton crafting.

I like to continue drawing both traditionally and digitally, so I am practicing both. Recently, I started the 'weekly speedpaint' of birds just to practice drawing digitally and learn anything that crosses my path while drawing.

The music I listen is metal, rock or alternative, and most instrumental music.

Haha I did know you and your Krovendraeks (did I spell that right?) for a longer time now (through Mystic)! Some time ago you suddenly deleted all your artwork from your gallery, which was a pity. I am glad you are back and have found the confidence to share your art with us :D

Ah, really? Ha, NEARLY right - Krovens (which you can call them for short - and it's easier to spell for most people :'D) have a slightly odd grammar quirk to their name, as it originated from a now-dead dialect of theirs. So, it's "Krovendrakk" for singular, but "Krovendraekk" for plural. ^^
Ha, indeed... everything went into storage - a fair part of it is still there too, but mostly some of the old-and-ugly art. But yes, I may not be more confident, as such, but I came to a point where I realised that avoiding art entirely wasn't going to help anything - and that I couldn't just quit entirely, it killed me to do so; more than it killed me to hate my own art, which I still experience, but that's not as bad as not making anything at all, which was what I learned then.
So I still lack confidence, but I guess I do at least have the determination to TRY to improve and learn more...

Yes you always should draw whatever you like, improve as you wish and don't ever compare yourself to other artists. That latter has been killing me (or my motivation to draw) in the past, but I got over it and accepted my own set of skills and choose my own pathways of improvement instead of wanting to improve and be perfect at all aspects right now. Just do one thing at a time =) (or parallel, but not simultaneously). 

One very good way to learn is to simply make more art and get to know your own skills better. =) Don't hate it, but try to appreciate what you've done so far!
